Here is how I mounted my peep mirror, and it is a small mirror(less than 3 inches across), but I can see out of it fine, I never open my wingwindows, so that is not an issue.
I don't use the set screws, so it sometimes slides down a little over time, I suppose if I used a little piece of rubber between the metal and glass, it might stay where I put it, but I am lazy, and it works good enough for me.
I did have to bend/shape the mount tabs to fit the glass, I adjusted them just snug so the mirror would not wiggle while driving.
Here is the view from the drivers seat, it works just fine, but if it was bigger, I could see more.
I use this on my NL320 and U320 also, it's a lot better than drilling holes or dimpling/ruining the paint on the door window frame clamping a mirror down.

Problem...I always have the wings open.
I would love to find some original trailer mirrors and be done with it.
Until then I will keep moving them around until I like where they fit.

Are you talking about aftermarket mirrors like these below?
Or are you talking about these type of Datsun mirrors?

Them are kinda hard to find, the last set I found were in North Dakota, and they were not that good of shape(broken mirrors and heavily painted), that was at least a couple years ago.
All I can tell you is to start reading every newbie truck build until you see what you need and offer to buy the mirrors if they don't want them, that is how I used to find them.

Find a wink mirror somewhere and install it, there are lots of them on ebay, then you can just leave the side peep mirror where it is to be legal.
Stock 521 mirrors are hard to find in good condition, my work truck mirror has a bunch of silicone behind it holding it in place now, as the mirror kept falling out of the holder, lucky for me that I use silicone all the time so I had it in the truck the last time it fell out.
BTW, you actually are legal, you have a mirror on both sides, so you don't need the interior rear view mirror.

I really only need the stalk. 620 mirror fits the 521 stalk.
620 mirrors were made of different plastic and hold up well.

Well turn your head and look over your shoulder, since you have both them mirrors on the truck, they cannot give you a ticket for no mirrors, doesn't really matter if you can see out of them.
The only stock I had I used for an aftermarket chrome mirror I bought, it works great, so I don't have any stocks either.
I seen another glue on mirror I have that someone just drilled 3 holes in it to mount it, maybe you can find something that you can drill a couple holes in and make it fit temporarily.

As we sit currently...
New clutch slave went out on the last day of moving...been hard parked since Halloween.
Had a few coworkers swing by and help me push it in to the garage.
Will install new slave and hose Sunday. Hopefully get this out of the garage for a few hours more of unpacking.
Something else I'm doing...
My rear tires bub the inside of the fenders on compression. Trying to lightly roll them up.
Wood is not suitable for this application. Found a fence pole out behind the shed in the back yard I will cut to size tomorrow.
